  • 2 tablespoons peanut butter
  • 1 medium ripe banana
  • 12 teaspoons honey or maple syrup (optional)
  • 1 teaspoon chia seeds or flax seeds (optional)
  • 1 tablespoon dark chocolate chips (optional)
  • 1 pinch cinnamon (optional)
  • Sea salt flakes (optional)

Instructions

  1. Peel the banana and slice it into even 1/4-inch thick rounds (about 8-10 slices per stacker).
  2. Take one brown rice cake and spread about 1/2 tablespoon of peanut butter evenly across the top, reaching the edges.
  3. Place 2-3 banana slices on top of the peanut butter, pressing down gently so they stick.
  4. Place a second rice cake on top of the banana slices and press down gently to create a solid middle layer.
  5. Spread another 1/2 tablespoon of peanut butter on top of the second rice cake, then add another layer of 2-3 banana slices.
  6. Top with the final rice cake to create a three-layer stack. Add any optional toppings (honey, cinnamon, chocolate chips, etc.) and press gently.
  7. Repeat the process to make additional stackers. Serve immediately.

Notes

Eat immediately to maintain crunch. For a firmer banana, microwave slices for 10 seconds to soften. To prevent sogginess, pat banana slices dry if too moist. For a meal, mix protein powder into peanut butter or add Greek yogurt between layers.
