Creamy, no-cook overnight oats with peanut butter and banana. Just 5 minutes of prep and a breakfast that’s ready when you are.

Ingredients

Scale
  • ½ cup (50g) rolled oats
  • 2 tablespoons (32g) creamy peanut butter
  • 1 medium ripe banana (about 100g mashed)
  • ⅔ cup (160ml) milk of choice
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • Pinch of salt
  • ½ teaspoon (2.5ml) vanilla extract (optional)

Instructions

  1. Mash half of the banana in a jar or small bowl with a fork until mostly smooth with a few small chunks. Save the other half for topping.
  2. Add 2 tablespoons of peanut butter to the jar with the mashed banana. If thick, microwave for 10 seconds to soften.
  3. Pour in ⅔ cup of milk and stir to combine.
  4. Add ½ cup rolled oats, chia seeds (if using), maple syrup or honey, vanilla extract, and a pinch of salt. Stir well, scraping the bottom of the jar.
  5. Seal the jar and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir the oats. If too thick, add a splash of milk. Top with reserved banana slices, a drizzle of peanut butter, and any other desired toppings. Serve cold or microwave for 30-45 seconds for warm oats.

Notes

Mash banana thoroughly to avoid brown slimy chunks. Stir from the bottom to incorporate peanut butter. Let rest overnight for best texture. Don’t skip the salt. Use a wide-mouth jar for easy eating and cleaning. Make a double batch for the week; keeps up to 5 days in the fridge.
