A quick and easy one-pan meal featuring juicy bone-in, skin-on chicken thighs glazed with a sweet and tangy maple Dijon sauce, roasted alongside crispy Brussels sprouts for a comforting and flavorful weeknight dinner.

  • 4 bone-in, skin-on chicken thighs
  • 1 lb Brussels sprouts, washed, trimmed, and halved
  • 3 tablespoons pure maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil, divided
  • Salt and pepper, to taste
  • Fresh thyme leaves (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Warm your oven-safe skillet on the stove.
  2. Trim and halve the Brussels sprouts. Toss them in a bowl with 1 tablespoon olive oil, salt, and pepper. Set aside.
  3. In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, minced garlic, salt, and pepper to make the glaze.
  4. Pat chicken thighs dry with paper towels and season both sides generously with salt and pepper.
  5. Heat 1 tablespoon olive oil in the skillet over medium-high heat. Place chicken thighs skin-side down and cook without moving for 5-7 minutes until skin is golden and crisp. Flip and cook 2 more minutes. Remove chicken and set aside.
  6. Arrange Brussels sprouts cut side down around the chicken in the skillet. Pour half the glaze over the chicken and the rest over the sprouts. Toss sprouts gently to coat.
  7. Transfer skillet to the oven and roast for 20-25 minutes, basting chicken with pan juices halfway through. Chicken should reach 165°F (74°C) internal temperature and sprouts should be tender with crispy edges.
  8. Let chicken rest for 5 minutes before serving. Spoon extra pan juices over the top and sprinkle fresh thyme if desired.

Notes

Dry chicken skin thoroughly before searing to ensure crispiness. Avoid overcrowding the pan to keep Brussels sprouts crispy. If sprouts brown too quickly, tent pan with foil halfway through roasting. For extra crispy skin, broil 1-2 minutes at the end, watching closely. Maple syrup can be substituted with honey. Use bone-in, skin-on thighs for best flavor and texture. Leftovers keep well refrigerated for up to 3 days; reheat gently to preserve crispiness.
