This easy one-bowl banana bread is tender, moist, and perfectly domed. No mixer, no sifting, and no extra dishes—just one bowl and a spatula for a foolproof loaf every time.

Ingredients

Scale
  • 3 large ripe bananas, mashed (about 1 ½ cups)
  • ⅓ cup unsalted butter, melted
  • ¾ cup granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • Optional: ½ cup mix-ins (chocolate chips, chopped walnuts, or dried cranberries)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray. Optionally, line the bottom with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth (a few lumps are fine).
  3. Add the melted butter, sugar, egg, and vanilla extract to the bowl. Stir until combined; it may look grainy.
  4. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently just until no streaks of flour remain (about 10-15 strokes). If using mix-ins, fold them in now.
  5. Pour the batter into the prepared loaf pan and spread evenly.
  6. Bake for 55-65 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent with foil after 40 minutes.
  7. Cool in the pan for 10 minutes, then transfer to a cooling rack. Let cool completely (about 1 hour) before slicing.

Notes

Don’t overmix the batter—stir just until flour disappears. Use room-temperature ingredients. Check baking soda freshness. Let the loaf cool completely before slicing for best texture. Toast leftover slices for a crispy edge.
