A quick and easy recipe for mini pizza bagels that can be made ahead and frozen for convenient snacks or meals. Crispy on the outside, cheesy and melty inside, perfect for kids and adults alike.

Ingredients

  • Mini bagels (plain, whole wheat, or everything) – about 12 halves
  • Marinara sauce – about 1/3 cup (80 ml)
  • Shredded mozzarella cheese – 1 to 1 1/2 cups (100-150 g or about 4 to 6 oz)
  • Pepperoni slices – 20-30 slices
  • Grated Parmesan cheese (optional) – about 2 tablespoons (15 g or 0.5 oz)
  • Dried Italian seasoning – 1 teaspoon (2 g)
  • Olive oil (optional) – for brushing
  • Fresh basil or oregano (optional) – for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Slice each mini bagel in half if not pre-sliced. Lightly brush the cut sides with olive oil for extra crispness (optional).
  3. Spread about 1 tablespoon (15 ml) of marinara sauce evenly over each bagel half, avoiding overloading to prevent sogginess.
  4. Sprinkle approximately 2 tablespoons (20-25 g) of shredded mozzarella cheese over the sauce on each bagel.
  5. Place 2-3 slices of pepperoni on each bagel half. Substitute with other toppings if desired.
  6. Sprinkle a pinch of grated Parmesan cheese and a light dusting of dried Italian seasoning on top.
  7. Place the baking sheet with assembled mini pizza bagels in the freezer for 1-2 hours until toppings are firm (flash freeze).
  8. Once frozen, transfer the mini pizza bagels to a single layer in a freezer-safe bag or container. Label with date and bake instructions. Store up to 3 months.
  9. To bake from frozen, preheat oven to 375°F (190°C). Place mini pizza bagels on a baking sheet and bake for 12-15 minutes or until cheese is bubbly and edges are golden brown.

Notes

Flash freezing the assembled bagels before storing prevents toppings from sliding off and keeps the bagels crisp. Use freshly shredded mozzarella for better melting.
