These mini muffin tin pizza bites are crispy on the outside, soft and cheesy on the inside, and come together in about 20 minutes. Made with biscuit dough, marinara, and mozzarella, they’re the perfect quick snack for kids and adults alike.

  • 1 can (16.3 oz) refrigerated biscuit dough (Pillsbury Grands! Homestyle recommended)
  • 1/2 cup pizza sauce or marinara sauce
  • 1 1/2 cups shredded mozzarella cheese (freshly shredded preferred)
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Mini pepperoni slices (about 30-36 pieces) or other toppings of choice

Instructions

  1. Preheat oven to 375°F (190°C). Generously spray a 24-cup mini muffin tin with cooking spray.
  2. Open the can of biscuit dough and separate the biscuits. Cut each biscuit into 3 equal pieces (24 pieces total).
  3. Press each piece of dough into a muffin cup, pressing evenly against the bottom and up the sides about halfway.
  4. Pre-bake the dough cups for 5 minutes until slightly puffed and lightly golden on edges.
  5. Remove from oven and gently press down the centers with the back of a small spoon to create wells.
  6. Spoon about 1 teaspoon of pizza sauce into each cup.
  7. Add desired toppings (e.g., pepperoni, mushrooms, olives, cooked sausage).
  8. Top each cup with about 1 tablespoon shredded mozzarella and a pinch of Parmesan.
  9. Sprinkle with garlic powder, oregano, and red pepper flakes (if using).
  10. Bake for 8-10 minutes until cheese is melted and bubbly and dough edges are golden brown.
  11. Let cool in the pan for 2 minutes, then gently remove with a small offset spatula or butter knife. Transfer to a cooling rack.
  12. Garnish with fresh basil if desired. Let cool 1-2 minutes more before serving.

Notes

Do not skip the pre-bake step to avoid soggy dough. Use room temperature biscuit dough for easier handling. Do not overfill cups; fill about 3/4 full. Rotate pan halfway through baking for even browning. Let rest 3-4 minutes before serving to avoid burning. For gluten-free, use GF biscuit dough. For dairy-free, use vegan cheese. Can be assembled up to 2 hours ahead and refrigerated before baking (add 2-3 minutes to bake time). Freeze baked bites for up to 3 months.
