  • 1 cup whole milk
  • 1/2 cup maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin pie spice

  • 1/4 teaspoon salt
  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup chopped pecans
  • 1/4 cup maple syrup
  • 1/2 cup unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly with butter or non-stick spray.
  2. In a large bowl, whisk together the pumpkin puree, milk, 1/2 cup maple syrup, eggs, vanilla, pumpkin pie spice, cinnamon, and salt until smooth and well combined.
  3. Pour the pumpkin mixture into the prepared baking dish and spread it evenly to the edges.
  4. Sprinkle the dry yellow cake mix evenly over the pumpkin layer, covering every bit of pumpkin.
  5. Sprinkle the chopped pecans evenly over the cake mix layer.
  6. Drizzle the remaining 1/4 cup maple syrup over the top.
  7. Pour the melted butter evenly over the entire surface, covering as much of the cake mix as possible.
  8. Bake for 45–50 minutes, or until the top is golden brown and the edges are bubbly. The center should be set but still slightly jiggly.
  9. Let it cool on a wire rack for at least 20 minutes before serving.

Notes

For best results, toast the pecans before using. Let the cake rest for at least 20 minutes before serving to allow the pumpkin layer to set. If the edges brown too quickly, cover them with foil.
