  • 1/4 cup honey (60 ml), preferably raw or local
  • 4 cloves garlic, minced
  • 3 tablespoons low sodium soy sauce (45 ml)
  • 2 tablespoons extra virgin olive oil (30 ml)
  • 1 tablespoon fresh lemon juice (15 ml)
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 small red onion, cut into wedges
  • 1 cup baby carrots or sliced regular carrots
  • Salt and freshly ground black pepper, to taste
  • Optional garnish: chopped fresh parsley or green onions

Instructions

  1. Preheat the oven to 400°F (200°C) and line a rimmed 12×17 inch sheet pan with parchment paper or a silicone baking mat.
  2. In a medium bowl, whisk together honey, soy sauce, minced garlic, olive oil, and lemon juice until fully combined to make the glaze.
  3. Toss broccoli florets, sliced red bell pepper, onion wedges, and carrots with a light drizzle of olive oil, salt, and pepper. Spread evenly on one side of the sheet pan.
  4. Place the salmon fillets skin-side down on the opposite side of the sheet pan. Pat the fillets dry with paper towels.
  5. Brush the honey garlic glaze generously over the salmon fillets and drizzle a light coating over the vegetables.
  6. Roast in the oven for 12-15 minutes until the salmon is opaque and flakes easily with a fork, and the vegetables are tender but still crisp.
  7. Optional: Broil for 1-2 minutes at the end for a caramelized top, watching carefully to prevent burning.
  8. Remove from oven and let rest for 2 minutes. Garnish with chopped parsley or green onions if desired. Serve immediately.

Pat salmon dry before glazing to help the glaze stick and caramelize better. Watch carefully during broil step to prevent burning the honey glaze. Use fresh minced garlic for best flavor. If garlic browns too quickly, reduce oven temperature or cover loosely with foil. This recipe stores well in the fridge for up to 3 days; reheat gently in the oven at 300°F to maintain texture.
