  • 2 cups (240g) powdered sugar, sifted
  • 3 to 4 tablespoons milk (whole milk preferred)

Instructions

  1. Cream the butter and sugar: In a large bowl, beat the softened butter and granulated sugar together on medium speed for 2-3 minutes until light and fluffy. Scrape down the sides of the bowl once.
  2. Add the egg and vanilla: Beat in the egg and vanilla extract on low speed until just combined. Do not overmix.
  3. Mix the dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture, mixing on low speed until a soft dough forms. If too sticky, add a tablespoon more flour.
  4. Chill the dough: Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes (up to 2 days).
  5. Preheat and prep: Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  6. Roll and cut: On a lightly floured surface, roll one disc of dough to ¼-inch thickness. Cut out shapes with Halloween cookie cutters and place 1 inch apart on prepared baking sheets. Gather scraps, re-roll, and cut again.
  7. Bake: Bake for 8-10 minutes until edges are just barely golden. Let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  8. Make the icing: Sift the powdered sugar into a medium bowl. Add 3 tablespoons milk and corn syrup. Stir gently, then whisk until smooth. Add vanilla. Divide icing into bowls and add gel food coloring a tiny bit at a time.
  9. Transfer icing to squeeze bottles or piping bags fitted with small round tips. Test flow on a plate before piping.
  10. Decorate: For each cookie, pipe a thin outline around the edge, then flood the inside with icing. Add details while base is still wet. Let dry uncovered for 20-30 minutes (1 hour if stacking).

Do not skip chilling the dough—it prevents spreading. Sift powdered sugar to avoid lumps. For dairy-free, use oat milk and plant-based butter. For gluten-free, use a 1:1 gluten-free baking blend. Cookies stay fresh at room temperature for up to 5 days in an airtight container. Do not refrigerate.
