Easy Freezer-Friendly Mini Turkey Meatball Subs

These mini turkey meatball subs are the ultimate comfort food, featuring tender turkey meatballs, tangy marinara, and gooey provolone on toasted hoagie rolls. Perfect for busy nights, they freeze beautifully for quick meals anytime.

  • 1 lb (450 g) ground turkey (93% lean)
  • ½ cup (60 g) breadcrumbs (plain or Italian-style)
  • 1 large egg
  • ¼ cup (25 g) grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 6 mini hoagie rolls or sub buns
  • 1½ cups (360 ml) marinara sauce
  • 6 slices provolone or low-moisture mozzarella
  • 1 tablespoon olive oil
  • Fresh basil or parsley for garnish (optional)
  • Extra Parmesan for garnish (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine ground turkey, breadcrumbs, egg, Parmesan, garlic, oregano, salt, pepper, and red pepper flakes (if using). Mix gently with your hands until just combined.
  3. Using a cookie scoop or tablespoon, portion the mixture into 18 to 20 mini meatballs (about 1 inch in diameter). Roll lightly between your palms and place on the prepared baking sheet, spacing about 1 inch apart.
  4. Bake meatballs for 12 to 15 minutes, until cooked through and lightly browned (internal temperature of 165°F / 74°C). Let cool slightly on the pan.
  5. Reduce oven temperature to 375°F (190°C). Slice each hoagie roll lengthwise (not all the way through) and brush cut sides with olive oil. Place rolls cut-side up on a clean baking sheet.
  6. Toast rolls in the oven for 3 to 4 minutes, until edges are golden. Watch carefully to avoid burning.
  7. While rolls toast, warm marinara sauce in a small saucepan over medium-low heat until heated through.
  8. Remove toasted rolls from oven. Place 3 mini meatballs in each roll. Spoon about 2 tablespoons of warm marinara over the meatballs in each sub.
  9. Top each sub with a slice of provolone or mozzarella.
  10. Return assembled subs to the oven and bake for 8 to 10 minutes, until cheese is melted and bubbly and roll edges are golden. For browned cheese, switch to broil for the last 1 to 2 minutes, watching carefully.
  11. Let subs cool for 2 to 3 minutes before serving. Garnish with fresh basil or parsley and extra Parmesan if desired. Serve warm with extra marinara for dipping.

Notes

Toast the rolls twice to prevent sogginess. Don’t overwork the meatball mixture to keep them tender. For best results, freeze unbaked subs wrapped in foil and bake from frozen at 375°F for 20-25 minutes, removing foil for the last 5 minutes.
