  • 2 cups baby red potatoes, halved or quartered if large

  • 3 tablespoons unsalted butter, melted
  • 2 teaspoons Old Bay seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional)
  • Juice of 1 lemon
  • Fresh parsley, chopped (for garnish)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat your cooking surface: grill to medium-high heat (about 375°F) or oven to 400°F.
  2. Toss halved baby potatoes with 1 tablespoon melted butter, 1 teaspoon Old Bay seasoning, salt, and pepper. Roast on a baking sheet for about 15 minutes or parboil for 8 minutes.
  3. Tear off 4 large sheets of heavy-duty foil (about 12×12 inches each). Divide the par-cooked potatoes evenly among the center of each sheet.
  4. Place corn pieces on top of the potatoes, then layer the shrimp evenly over the corn. Sprinkle minced garlic over everything.
  5. Mix remaining 2 tablespoons melted butter with 1 teaspoon Old Bay, smoked paprika, cayenne pepper (if using), lemon juice, salt, and pepper. Drizzle evenly over each packet.
  6. Fold the foil over the ingredients and crimp edges tightly to seal packets.
  7. Place foil packets on grill or baking sheet. Cook for 12-15 minutes until shrimp are opaque and pink, and potatoes are tender. Rotate packets halfway if grilling.
  8. Carefully open packets, sprinkle with fresh parsley, and serve immediately with extra lemon wedges if desired.
