  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp chili powder (optional)
  • 1 tbsp olive oil (optional)
  • Salt and freshly ground black pepper to taste
  • 2 cups (400 g) cooked rice or pasta
  • Fresh cilantro or parsley, chopped (optional, for garnish)

Instructions

  1. Heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add smoked paprika, onion powder, and garlic powder. Stir for about 30 seconds to toast the spices.
  2. Pour in the canned diced tomatoes with their juices and 1 cup of chicken broth. Stir to combine and bring to a gentle simmer. Cook uncovered for 8-10 minutes, stirring occasionally, until the sauce thickens slightly.
  3. Drain and rinse the black beans and corn. Add them to the sauce and stir gently to distribute evenly. Simmer for another 5 minutes to heat through. Add chili powder here if using.
  4. Season with salt and freshly ground black pepper gradually, tasting as you go.
  5. Cook rice or pasta according to package instructions while the sauce simmers.
  6. Serve the hot canned food pantry meal over the cooked rice or pasta. Garnish with chopped fresh cilantro or parsley if desired.
