A quick and easy frozen yogurt bark combining creamy Greek yogurt, fresh strawberries, honey, and crunchy granola for a refreshing and wholesome snack.

  • 2 cups (about 475 ml) plain full-fat or 2% Greek yogurt
  • 1 cup (about 150 g) fresh strawberries, hulled and sliced
  • 2 tablespoons (30 ml) raw or local honey
  • 1 teaspoon (5 ml) pure vanilla extract (optional)
  • 1/2 cup (50 g) granola, your favorite crunchy variety
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Line a 9×13-inch baking sheet with parchment paper or a silicone baking mat.
  2. In a medium mixing bowl, combine Greek yogurt, honey, and vanilla extract. Stir gently until smooth and creamy. Add lemon zest if using.
  3. Fold in the sliced strawberries gently to keep their shape.
  4. Pour the yogurt and strawberry mixture onto the lined baking sheet and spread evenly to about 1/4-inch thickness.
  5. Sprinkle granola evenly over the top and press down lightly to help it stick.
  6. Freeze the baking sheet for at least 4 hours or until completely firm, preferably overnight.
  7. Once frozen, peel the bark off the parchment and break into irregular pieces.
  8. Store the pieces in an airtight container or freezer bag in the freezer for up to 2 weeks.

Notes

Use thick Greek yogurt (full-fat or 2%) for best creamy texture. Fold strawberries gently to avoid sogginess. Spread mixture evenly about 1/4-inch thick for faster freezing and easier breaking. Use crunchy but not too hard granola. Store bark in single layers separated by parchment paper to prevent clumping. Let bark sit 3-5 minutes at room temperature before breaking if too hard.
