These easy cranberry brie bites with puff pastry are the perfect last-minute appetizer for any gathering. With just a few simple ingredients and under 30 minutes, you can create a crowd-pleasing treat that looks like it came from a fancy catering menu.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, cut into small cubes (about 16 pieces, roughly 1/2 inch each)
  • 1/4 cup whole berry cranberry sauce
  • 1 large egg, beaten with 1 tablespoon water (for egg wash)
  • Fresh rosemary or thyme, for garnish (optional)
  • Flaky sea salt, for sprinkling

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. On a lightly floured surface, unfold the thawed puff pastry sheet. Cut into 16 equal squares (about 2 inches each).
  3. Place the squares on the prepared baking sheet, spacing them about an inch apart.
  4. Place one cube of brie in the center of each pastry square.
  5. Spoon about 1/2 teaspoon of cranberry sauce over each piece of brie.
  6. Brush the exposed edges of the pastry with the beaten egg wash, avoiding the brie and cranberry.
  7. Bake for 14-16 minutes, until the pastry is puffed and golden brown and the brie is melted and bubbly.
  8. Let the bites cool on the baking sheet for about 5 minutes. Sprinkle with fresh rosemary or thyme and a pinch of flaky sea salt.
  9. Serve warm.

Notes

Keep everything cold for best puff. Don’t overfill. Use a sharp knife for cutting pastry. Can be assembled up to 24 hours in advance and refrigerated. For freezing, assemble on a baking sheet, freeze until solid, then transfer to a freezer bag for up to 3 months. Bake from frozen, adding 5-7 minutes.
