This Easy Chicken Noodle Soup with Fresh Dill is a quick, comforting weeknight dinner that comes together in about 30 minutes. Fresh dill adds a bright, lemony freshness to the rich broth, making it a soul-soothing meal perfect for busy days.

Ingredients

Scale
  • 1 lb (450g) boneless, skinless chicken breast or thighs
  • 2 tablespoons (30ml) olive oil
  • 1 medium yellow onion (about 150g), diced
  • 2 medium carrots (about 150g), peeled and sliced into half-moons
  • 2 celery ribs (about 100g), sliced
  • 3 cloves garlic, minced
  • 6 cups (1.4 liters) low-sodium chicken broth
  • 6 oz (170g) wide egg noodles (about 3 cups dried)
  • 1/2 cup (15g) fresh dill, roughly chopped
  • Salt and black pepper to taste (start with 1 tsp salt and 1/2 tsp pepper)
  • 1 tablespoon (15ml) lemon juice (optional but recommended)

Instructions

  1. Prep your ingredients first (5 minutes). Dice the onion, slice the carrots and celery, mince the garlic, and chop the dill. Cut the chicken into bite-sized pieces, about 1-inch cubes.
  2. Sauté the vegetables (5 minutes). Heat the olive oil in a large pot over medium heat. Add the onion, carrots, and celery. Cook for about 4-5 minutes, stirring occasionally, until the onion is translucent and the vegetables start to soften.
  3. Add garlic and chicken (3 minutes). Stir in the minced garlic and cook for 30 seconds until fragrant. Then add the chicken pieces. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook for about 2-3 minutes, stirring occasionally, until the chicken is no longer pink on the outside.
  4. Pour in the broth (2 minutes). Add the 6 cups of chicken broth to the pot. Use a wooden spoon to scrape up any browned bits from the bottom. Bring the broth to a boil over high heat, about 2-3 minutes.
  5. Cook the noodles (8-10 minutes). Once the broth is boiling, add the egg noodles. Stir them in so they don’t stick together. Reduce the heat to medium and let it simmer for about 8-10 minutes, or until the noodles are tender. The chicken should be fully cooked by now.
  6. Add the dill and finish (1 minute). Remove the pot from the heat. Stir in the chopped fresh dill and the lemon juice if using. Taste the broth and adjust the salt and pepper. Let the soup sit for 1-2 minutes before serving to let the flavors meld.
  7. Serve immediately. Ladle the soup into bowls and garnish with a tiny extra sprinkle of fresh dill if desired.

Notes

For gluten-free version, use gluten-free pasta or rice instead of egg noodles. For dairy-free, this is already dairy-free as written. If using dried dill instead of fresh, use 1 tablespoon and add it earlier in the cooking process. To keep noodles from getting mushy in leftovers, cook noodles separately and add to individual bowls when serving. The soup freezes well without noodles—freeze the broth base and add fresh noodles when reheating.
