These Easy Candy Corn Blondies are a quick, one-bowl dessert with a buttery, chewy texture and festive candy corn throughout. Perfect for Halloween parties, potlucks, or any fall gathering, they come together in about 35 minutes and are always a crowd-pleaser.

  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) packed light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup (about 180g) candy corn

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang on two sides.
  2. Melt the butter in a large mixing bowl. Let cool for about 2 minutes.
  3. Whisk in the brown sugar until smooth and no lumps remain.
  4. Add the egg and vanilla. Whisk vigorously until glossy and slightly thickened, about 30 seconds.
  5. Sprinkle flour, baking powder, and salt over the wet mixture. Fold gently with a rubber spatula until just combined—do not overmix.
  6. Fold in 3/4 cup of the candy corn gently, being careful not to crush them. Reserve the remaining 1/4 cup for topping.
  7. Scrape batter into the prepared pan and spread evenly. Press the reserved candy corn into the top.
  8. Bake on the middle rack for 22-25 minutes, until edges are golden and center is slightly underdone. A toothpick inserted should come out with moist crumbs.
  9. Cool in the pan on a wire rack for 30 minutes, then lift out using parchment and cool completely (about another 30 minutes) before cutting into 16 squares.

Notes

Use fresh candy corn for best results—old or soft candy corn will melt. For clean cuts, refrigerate blondies for 15 minutes before slicing. Blondies taste even better the next day. Store in an airtight container at room temperature for up to 5 days, or freeze for up to 3 months.
