This creamy, spicy, and cheesy buffalo chicken dip comes together in about 20 minutes using simple ingredients. Perfect for game days, potlucks, or a quick and satisfying dinner.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (from about 2 medium chicken breasts or 1 rotisserie chicken)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce (e.g., Frank’s RedHot Original)
  • 1/2 cup ranch dressing or blue cheese dressing
  • 1 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1/4 cup crumbled blue cheese (optional)
  • 1 tablespoon unsalted butter (optional, for sautéing aromatics)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder (optional)
  • Salt and black pepper to taste
  • For serving: Tortilla chips, celery sticks, carrot sticks, or crusty bread

Instructions

  1. Prepare the chicken: If using raw chicken breasts, place them in a pot and cover with water. Bring to a boil, then reduce heat and simmer for 12-15 minutes until cooked through. Drain and shred with two forks. Alternatively, use a rotisserie chicken and shred the meat. You need about 2 cups of shredded chicken.
  2. Soften the cream cheese: Cut the cream cheese into cubes and let it sit at room temperature for about 20-30 minutes. If short on time, microwave in 10-second bursts until soft, but do not melt.
  3. Combine the base: In a large skillet over medium heat, add the softened cream cheese, buffalo wing sauce, and ranch dressing. Stir continuously until the cream cheese is fully melted and the mixture is smooth, about 3-4 minutes.
  4. Add the chicken and seasonings: Stir in the shredded chicken, garlic powder, and onion powder. Continue cooking for another 2-3 minutes until everything is heated through and well combined.
  5. Melt the cheese: Reduce the heat to low. Add the shredded cheddar cheese and stir until it is completely melted and the dip is thick and bubbly, about 2 minutes. Do not let it boil.
  6. Finish with blue cheese: If using, sprinkle the crumbled blue cheese over the top and gently fold it in.
  7. Serve immediately: Transfer the dip to a serving bowl or serve straight from the skillet. Garnish with fresh chives or extra hot sauce if desired. Serve with tortilla chips, celery sticks, or carrot sticks.

Notes

For best results, let cream cheese soften at room temperature. Use a rotisserie chicken to save time. Keep heat medium-low to prevent dairy from separating. Taste and adjust hot sauce to your preferred spice level. The dip can be made ahead and refrigerated for up to 4 days; reheat with a splash of milk if needed. Freezes well for up to 3 months.
