These quick and easy brie cranberry puff pastry bites are the perfect last-minute appetizer for any gathering. With just four ingredients and 25 minutes, you can create golden, flaky bites filled with creamy brie and tart cranberry sauce that will impress everyone.

Ingredients

Scale
  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, rind removed and cut into small cubes (about 1/2-inch pieces)
  • 1/2 cup cranberry sauce (homemade or canned)
  • 1 large egg, beaten (for egg wash)
  • Fresh thyme leaves (optional garnish)
  • Flaky sea salt (optional garnish)
  • Chopped pecans or walnuts (optional garnish)
  • Honey drizzle (optional garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. On a lightly floured surface, gently unfold the thawed puff pastry sheet. Cut the pastry into 16 equal squares, about 2 inches each.
  3. Place the squares on the prepared baking sheet, spacing them about 1 inch apart.
  4. Using the tip of a sharp knife, lightly score a line about 1/4 inch from the edge of each pastry square (do not cut all the way through).
  5. Place one or two small cubes of brie in the center of each pastry square.
  6. Spoon about 1/2 teaspoon of cranberry sauce on top of the brie.
  7. In a small bowl, beat the egg with 1 tablespoon of water. Using a pastry brush, gently brush the edges of each pastry square with the egg wash.
  8. Bake for 15-18 minutes, or until the pastry is puffed and deep golden brown.
  9. Cool for 2-3 minutes on the baking sheet before transferring to a serving platter.
  10. Garnish with fresh thyme leaves and a pinch of flaky sea salt if desired. Serve warm.

Notes

Keep puff pastry cold for best flakiness. Do not skip the egg wash for golden color. Assemble up to 2 hours ahead and refrigerate unbaked. Double the batch as these disappear fast. For gluten-free, use gluten-free puff pastry. For vegan, use vegan puff pastry, cashew-based brie alternative, and plant-based milk wash.
