  • 1 large orange, peeled and segmented (or 1 cup mandarin orange segments, drained)
  • 1/2 cup dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (toasted if desired)
  • 3 tablespoons honey
  • 2 tablespoons fresh lime juice (about 1 large lime)
  • 1 teaspoon lime zest
  • 1 tablespoon poppy seeds
  • Pinch of salt

Instructions

  1. Wash all fruit thoroughly. Core and dice apples and pears into 1/2-inch cubes. Halve grapes lengthwise. If using fresh pomegranate, score skin and break apart under water to release arils.
  2. In a small bowl, whisk together honey, lime juice, lime zest, poppy seeds, and a pinch of salt. Taste and adjust sweetness or tartness as needed.
  3. In a large mixing bowl, gently toss together apples, pears, grapes, pomegranate arils, orange segments, and dried cranberries (if using).
  4. Pour dressing over fruit and fold gently to coat evenly without bruising.
  5. Sprinkle chopped nuts over top and toss once more. If serving later, add nuts just before serving to maintain crunch.
  6. Let salad rest at room temperature for 10 minutes before serving to allow flavors to meld.
  7. Serve in individual bowls or on a platter. Garnish with extra pomegranate arils or lime zest if desired.
