A stunning no-cook charcuterie board featuring creamy brie, crisp Honeycrisp apples, salty prosciutto, and seasonal fruits and nuts. Perfect for fall gatherings or a cozy night in.

Ingredients

Scale
  • 8 ounces brie cheese, at room temperature
  • 4 ounces aged gouda or sharp cheddar, sliced
  • 4 ounces blue cheese, crumbled (optional)
  • 2 large Honeycrisp apples, thinly sliced
  • 1 cup red seedless grapes, washed and left in small clusters
  • 1/2 cup dried figs or dates
  • 1/4 cup pomegranate seeds
  • 4 ounces prosciutto, thinly sliced
  • 4 ounces salami, sliced into thin rounds
  • 1 cup mixed nuts (walnuts and pecans)
  • 1 cup crostini or crackers
  • 1/4 cup honey or fig preserves
  • Fresh rosemary sprigs for garnish (optional)

Instructions

  1. Take the brie out of the refrigerator 30 minutes before assembling to bring to room temperature.
  2. Core the Honeycrisp apples and slice thinly, about 1/4 inch thick. Toss with a squeeze of lemon juice to prevent browning.
  3. Slice the aged gouda or cheddar into thin triangles. Leave the brie whole or cut into wedges. Crumble the blue cheese if using.
  4. Place the brie in the center of a large wooden board or platter. Arrange the gouda and blue cheese around it, leaving space between each type.
  5. Fold the prosciutto slices into loose ribbons and place in small piles around the cheese. Arrange the salami slices in overlapping rows.
  6. Arrange the apple slices in a fan pattern near the brie. Place grape clusters in small bunches around the board. Scatter dried figs, dates, and pomegranate seeds in the gaps.
  7. Pour the mixed nuts into remaining empty spaces. Arrange crostini or crackers in small stacks or rows.
  8. Drizzle honey or fig preserves over the brie. Garnish with fresh rosemary sprigs. Serve immediately or refrigerate until ready.

Notes

For best results, bring cheese to room temperature before serving. Slice apples just before serving to prevent browning. If making ahead, add apples and nuts just before serving. Leftover cheese keeps for up to 5 days in the refrigerator; apples should be eaten within 24 hours.
