Easy 5-Minute Sunbutter and Jelly Roll-Ups

These quick and easy sunbutter and jelly roll-ups are a fun, nut-free twist on the classic PB&J. Made with just three ingredients, they come together in under five minutes and are perfect for lunchboxes.

Ingredients

  • 1 soft taco-sized flour tortilla (room temperature)
  • 1 to 1.5 tablespoons sunbutter (sunflower seed butter)
  • 1 tablespoon jelly or jam (any flavor, such as grape or strawberry)

Instructions

  1. Lay out the tortilla flat on a cutting board. If cold, microwave for 10 seconds to soften.
  2. Spread 1 to 1.5 tablespoons of sunbutter evenly over the tortilla, leaving a small half-inch border around the edges.
  3. Spoon about 1 tablespoon of jelly onto the sunbutter and spread gently, again leaving a small border.
  4. Starting at one edge, roll the tortilla tightly without tearing, keeping it snug as you go.
  5. Using a sharp knife or pizza cutter, slice the rolled tortilla into 1-inch thick rounds to make 5-6 pinwheels.
  6. Place the pinwheels upright in a lunchbox container. Serve immediately or refrigerate.

Notes

For younger children, leave the tortilla whole and unsliced for easier handling. Roll-ups can be made the night before and stored in an airtight container in the fridge for up to 3 days. To freeze, slice and freeze in a single layer, then transfer to a freezer-safe bag for up to a month. Thaw overnight in the fridge.
