Easy 5-Ingredient Grilled Chicken and Peach Flatbread

A quick and simple summer recipe combining smoky grilled chicken with juicy peaches on a crisp flatbread, perfect for light meals and gatherings.

  • 1 pound boneless, skinless chicken breast, thinly sliced or pounded
  • 2 medium fresh peaches, ripe but firm, sliced into thin wedges
  • 2 large flatbreads (about 8-inch diameter)
  • 2 tablespoons extra virgin olive oil
  • A small handful of fresh basil leaves, torn

Instructions

  1. Rinse and pat dry the chicken breasts. Slice thinly or gently pound to about ½ inch thickness. Season both sides lightly with salt and pepper.
  2. Wash and dry peaches, then cut into thin wedges about ¼ inch thick.
  3. Using a pastry brush, lightly coat one side of each flatbread and both sides of chicken slices with olive oil.
  4. Preheat grill or grill pan over medium-high heat until hot.
  5. Place chicken on the grill. Cook about 3-4 minutes per side until grill marks appear and chicken is cooked through (internal temp 165°F).
  6. Place peach slices on grill. Grill for about 1-2 minutes per side until caramelized and softened but not mushy.
  7. Flip the flatbread oil-side down and grill for about 30 seconds to 1 minute until warm and lightly charred. Remove from heat.
  8. Layer grilled chicken slices evenly over flatbread, top with grilled peach wedges, then scatter torn basil leaves on top. Season with a pinch more salt if needed.
  9. Serve immediately while warm.

Notes

Let the chicken rest a few minutes after grilling to keep it juicy. Watch peaches closely to avoid burning. Brush olive oil right before grilling to prevent sticking. If no grill available, use skillet and oven to cook components. Avoid microwaving leftovers to keep flatbread crisp.
