These cranberry brie bites with honey thyme are the perfect party appetizer—ready in under 30 minutes with simple ingredients. Flaky puff pastry, melted brie, tart cranberry sauce, and a sweet honey-thyme drizzle make them an irresistible crowd-pleaser.

Ingredients

Scale
  • 1 sheet frozen puff pastry (about 250g), thawed but cold
  • 4 oz (115g) brie cheese, cut into small cubes
  • 1/3 cup (100g) whole berry cranberry sauce
  • 2 tablespoons honey (for the bites)
  • 4–5 sprigs fresh thyme
  • 2 tablespoons honey (for the drizzle)
  • 1 teaspoon fresh thyme leaves
  • Pinch of flaky sea salt

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Lightly flour your work surface. Unfold the puff pastry sheet and gently roll it out to about 1/8 inch thick. Using a 2-inch cookie cutter, cut out rounds (about 18-20). Place them on the prepared baking sheet, spacing about 1 inch apart.
  3. Cut the brie into small cubes, about 1/2 inch each. Leave the rind on or remove it as desired.
  4. Using your thumb or the back of a small spoon, gently press an indent into the center of each pastry round. Place one brie cube in the center and top with about 1/2 teaspoon of cranberry sauce.
  5. Bake for 12-15 minutes, until the pastry is puffed and golden brown and the brie is bubbly.
  6. While the bites bake, warm 2 tablespoons honey in a small saucepan over low heat or in the microwave for 10 seconds. Stir in 1 teaspoon fresh thyme leaves and a pinch of flaky sea salt.
  7. Remove the baking sheet from the oven and let the bites cool for 2-3 minutes. Transfer to a serving platter, drizzle with the honey thyme mixture, and garnish with tiny thyme sprigs. Serve warm.

Notes

Keep the puff pastry cold for best flakiness. Don’t overfill the bites. The honey thyme drizzle is best made fresh. Assemble up to 24 hours ahead and refrigerate; bake directly from cold, adding 2-3 minutes. For gluten-free, use gluten-free puff pastry or phyllo cups. For vegan, use plant-based brie and maple syrup instead of honey.
