A fun twist on classic Rice Krispie treats shaped like school buses and packed with nostalgic s’mores flavor, perfect for kids’ parties and snacks.

  • 6 cups (150g) Rice Krispies cereal
  • 4 cups (100g) mini marshmallows
  • 3 tablespoons (45g) unsalted butter, softened
  • 1 cup (120g) graham crackers, crushed
  • 1 cup (175g) milk chocolate chips
  • Yellow food coloring (optional)
  • Black decorating gel or melted chocolate
  • 1 teaspoon vanilla extract

Instructions

  1. Lightly spray a 9×13 inch pan with non-stick spray or line it with parchment paper, leaving some overhang for easy removal.
  2. In a medium saucepan over low heat, melt 3 tablespoons (45g) of unsalted butter.
  3. Add 4 cups (100g) of mini marshmallows and stir continuously until completely melted and smooth, about 5 minutes.
  4. Remove from heat and stir in 1 teaspoon vanilla extract and a few drops of yellow food coloring if desired.
  5. In a large bowl, mix 6 cups (150g) Rice Krispies cereal with 1 cup (120g) crushed graham crackers.
  6. Pour the melted marshmallow and butter mixture over the cereal and graham crackers and fold together until evenly coated.
  7. Gently stir in 1 cup (175g) milk chocolate chips while the mixture is still warm but not hot enough to melt them fully.
  8. Transfer the mixture to the prepared pan and press firmly and evenly using a buttered spatula or wax paper.
  9. Let cool completely at room temperature for about 1 hour.
  10. Lift the slab out using the parchment edges and cut into rectangles about 3 inches long and 2 inches high to form school bus shapes.
  11. Use black decorating gel or melted chocolate to draw wheels, windows, and doors on each bus.
  12. Let decorations set for a few minutes before serving.

Notes

Work quickly when mixing marshmallows and cereal to avoid hardening. Use low heat to melt marshmallows to prevent scorching. Press mixture firmly but not too hard to keep treats light. Let treats cool completely before cutting to avoid crumbling. Refrigerate briefly if chocolate chips melt too much before cutting. Decorating can be done with a piping bag or a zip-top bag with a small corner cut.
