  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp dill pickle juice
  • 1 tsp yellow mustard
  • 1 tsp garlic powder
  • Freshly ground black pepper, a pinch
  • 8 slider buns or small dinner rolls (brioche or potato buns recommended)
  • Thinly sliced cheddar cheese (optional)
  • Thinly sliced red onions
  • Leafy lettuce or baby spinach
  • Pickle slices

Instructions

  1. Make the Tangy Special Sauce: In a small bowl, whisk together mayonnaise, ketchup, dill pickle juice, yellow mustard, garlic powder, and a pinch of black pepper. Taste and adjust tanginess by adding more pickle juice if desired. Cover and chill while prepping the rest.
  2. Prepare the Patties: Divide ground beef into 8 equal portions (about 2 oz each). Roll each into a loose ball without packing tightly. Season both sides generously with salt and pepper right before cooking.
  3. Heat the Skillet: Place cast iron skillet or griddle over medium-high heat and add a thin layer of oil. Heat until oil is shimmering but not smoking, about 3-5 minutes.
  4. Smash the Burgers: Place 2-3 beef balls spaced out on the hot surface. Immediately press down firmly with a spatula or burger press to flatten into thin patties about ¼ inch thick. Hold pressure for about 10 seconds.
  5. Cook the Patties: Cook patties undisturbed for 2-3 minutes until edges are golden and crisp. Flip carefully, add cheddar cheese if using, and cook another 1-2 minutes until cheese melts and patties are cooked through but juicy.
  6. Toast the Buns: Slice slider buns and toast cut-side down in the same skillet for about 1 minute until golden and slightly crisp.
  7. Assemble the Sliders: Spread a generous spoonful of tangy special sauce on each bun bottom. Layer with lettuce, a crispy patty, pickles, and thin slices of red onion. Top with the bun.
  8. Serve and Enjoy: Serve sliders warm and fresh. Keep cooked patties warm in a low oven (200°F) if assembling for a group.

Notes

Ensure skillet is very hot before cooking to get crispy edges. Salt patties right before cooking to avoid drying out. Press patties firmly and hold smash for 10 seconds. Toast buns in skillet for added flavor. Keep special sauce chilled until serving.
