Instructions

  1. Peel and slice the peaches into roughly ½-inch thick slices. Toss them in a mixing bowl with sugar, lemon juice, vanilla extract, cornstarch, and cinnamon if using. Set aside for 10 minutes to macerate.
  2. Melt butter over medium heat in a saucepan, stirring frequently until it foams and turns golden brown with a nutty aroma (about 5 minutes). Remove from heat immediately.
  3. In a separate bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, beat the egg and milk together. Slowly stir the wet ingredients into the dry, then fold in the warm brown butter until batter is slightly thick but pourable.
  4. Pour the peach mixture evenly into an 8×8 inch oven-safe baking dish. Spread the brown butter batter over the peaches with a spatula, covering as much as possible.
  5. Bake in a preheated oven at 375°F (190°C) for 40-45 minutes until the topping is golden brown and crisp and the peach filling bubbles at the edges.
  6. Let the cobbler cool for 10-15 minutes to thicken. Serve warm with generous scoops of vanilla bean ice cream.
