  • Salt and black pepper, to taste
  • 2 tablespoons olive oil (extra virgin recommended)
  • 4 tablespoons unsalted butter (about 60 g), divided, softened but not melted
  • 4 cloves garlic, minced finely
  • 1/3 cup sun-dried tomatoes (about 50 g), chopped, packed in oil and drained
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml), low sodium preferred
  • A handful fresh basil, chopped (optional)
  • 1/4 cup Parmesan cheese (25 g), freshly grated

Instructions

  1. Pat the chicken breasts dry with paper towels, then gently pound them to about 1/2 inch (1.3 cm) thickness for even cooking. Season both sides with salt and black pepper. (Prep time: 5 minutes)
  2. Heat 2 tablespoons (30 ml) of olive oil over medium-high heat in a large skillet until shimmering but not smoking.
  3. Place the chicken breasts in the hot skillet and cook for about 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Transfer to a plate and loosely cover with foil to rest. (Cooking time: 10 minutes)
  4. Reduce heat to medium. Add 2 tablespoons (30 g) of butter to the same pan. Once melted, add minced garlic and stir constantly for 1-2 minutes until fragrant but not browned.
  5. Add chopped sun-dried tomatoes and stir for another minute to release flavors.
  6. Pour in 1/2 cup (120 ml) chicken broth and 1 cup (240 ml) heavy cream. Stir gently to combine, scraping up any brown bits. Let the sauce simmer for 4-5 minutes until slightly thickened.
  7. Stir in the remaining 2 tablespoons (30 g) butter and 1/4 cup (25 g) grated Parmesan cheese until melted and smooth. Add chopped fresh basil if using, then season with salt and pepper to taste.
  8. Return the chicken breasts to the pan, nestle them into the sauce, and spoon sauce over them. Warm through for 2-3 minutes before serving.

Notes

Use fresh garlic finely minced to avoid bitterness. Cook garlic gently in butter to prevent burning. If sauce thickens too much, thin with a splash of chicken broth or cream. Let chicken rest after searing to keep it juicy. For dairy-free version, substitute butter with coconut oil and heavy cream with full-fat coconut milk.
