  • 1 tablespoon (12g) chia seeds
  • 2 tablespoons (30ml) pure maple syrup
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional toppings: chopped pecans, extra maple syrup, whipped cream, toasted pumpkin seeds

Instructions

  1. In a medium bowl or directly in your mason jar, whisk together the pumpkin puree, milk, Greek yogurt, maple syrup, and vanilla extract until smooth and uniform.
  2. Add the rolled oats, chia seeds, pumpkin pie spice, and a pinch of salt. Stir until the oats are fully coated in the pumpkin mixture.
  3. Divide the mixture evenly into mason jars or airtight containers, leaving about an inch of space at the top.
  4. Seal the jars tightly and give each a good shake to ensure even distribution.
  5. Refrigerate for at least 6 hours, but overnight (8-12 hours) is best for optimal texture.
  6. In the morning, open a jar and stir. The oats should be thick and creamy. If too thick, stir in a splash of milk; if too thin, let sit longer or add more chia seeds next time.
  7. Add desired toppings and enjoy cold, or microwave for 30-45 seconds if you prefer warm oats.

Notes

Use old-fashioned rolled oats, not quick oats, for the best texture. Mix pumpkin puree thoroughly to avoid clumps. For vegan version, use plant-based yogurt and milk. For lower sugar, reduce maple syrup to 1 tablespoon and add half a mashed banana. These keep well in the fridge for up to 5 days; do not freeze.
