  • 3 cups low sodium chicken broth
  • 1 cup heavy cream (can substitute half-and-half for lighter version)
  • 8 ounces dry penne or rigatoni pasta
  • 1 teaspoon Italian seasoning (blend of oregano, basil, and thyme)
  • Salt and pepper, to taste
  • ½ cup freshly grated Parmesan cheese
  • Red pepper flakes (optional, to taste)
  • Fresh basil or parsley, chopped for garnish

Instructions

  1. Slice chicken breasts into 1-inch bite-sized pieces and season with salt, pepper, and Italian seasoning.
  2. Heat 2 tablespoons olive oil in a large deep skillet over medium heat. Add chicken in a single layer and cook 5-6 minutes, flipping occasionally, until golden but not fully cooked. Remove chicken and set aside.
  3. In the same pan, add 1 tablespoon olive oil if needed. Sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant.
  4. Pour in chicken broth and heavy cream, stir to combine. Add dry pasta and stir well to submerge.
  5. Bring to a gentle boil, then reduce heat to medium-low and cover. Simmer 12-15 minutes, stirring every 5 minutes to prevent sticking, until pasta is tender and sauce thickens. Add broth or water if liquid evaporates too fast.
  6. Nestle browned chicken back into the sauce, stir gently, cover and cook 5 more minutes until chicken reaches 165°F internal temperature.
  7. Remove lid, stir in Parmesan cheese. Adjust seasoning with salt, pepper, and optional red pepper flakes. Stir until creamy and combined.
  8. Garnish with chopped fresh basil or parsley and serve hot.

Do not overcrowd the pan when browning chicken to get a golden crust. Stir pasta often to prevent sticking. Add broth gradually to maintain sauce consistency. Let sauce rest 5 minutes off heat to thicken. Fresh garlic and sun-dried tomatoes are key for flavor. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. For gluten-free, use rice or chickpea penne.
