  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700 grams)
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons unsalted butter, softened
  • 4 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes (oil-packed or rehydrated dry)
  • 1 cup low sodium chicken broth (240 ml)
  • 3/4 cup heavy cream (180 ml)
  • 1/2 cup freshly grated parmesan cheese (50 grams)
  • 1 teaspoon Italian seasoning (oregano, basil, thyme, rosemary blend)
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Handful of fresh basil, chopped (for garnish)

Instructions

  1. Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and half the Italian seasoning.
  2. Heat 2 tablespoons olive oil and 2 tablespoons butter in a large skillet over medium-high heat until shimmering and melted.
  3. Place chicken breasts in the skillet without crowding. Cook for 5-6 minutes on the first side until golden brown. Flip and cook another 5 minutes or until internal temperature reaches 165°F (74°C). Remove chicken and set aside tented with foil.
  4. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the same pan. Stir constantly for 1-2 minutes until fragrant but not browned.
  5. Pour in 1 cup chicken broth, scraping the bottom of the pan to lift browned bits. Simmer for 2-3 minutes to reduce slightly.
  6. Stir in 3/4 cup heavy cream and 1/2 cup grated parmesan cheese. Continue stirring until cheese melts and sauce thickens, about 3-4 minutes. Add more broth or cream if sauce is too thick.
  7. Add remaining Italian seasoning, optional red pepper flakes, and adjust salt and pepper to taste.
  8. Return chicken breasts to the skillet, spoon sauce over them, and warm together for 2-3 minutes to meld flavors.
  9. Remove from heat, garnish with chopped fresh basil, and serve immediately.

Notes

Do not overcrowd the skillet when searing chicken to ensure a golden crust. Stir garlic and sun-dried tomatoes constantly to avoid burning. If sauce is too thin, simmer longer or add extra parmesan cheese to thicken. If too thick, add broth or cream to loosen. For thicker chicken breasts, pound to even thickness for even cooking. Sauce can be made dairy-free by substituting heavy cream with full-fat coconut cream and using dairy-free cheese alternatives.
