  • 2 cans (15 ounces each) white beans (cannellini or Great Northern), drained and rinsed
  • 1 cup corn kernels (frozen or canned)
  • 4 ounces cream cheese, softened
  • 3 cups chicken broth (low sodium recommended)
  • 1 can (4 ounces) diced green chilies
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings: shredded cheddar cheese, chopped cilantro, sour cream, lime wedges

Instructions

  1. Heat 1 tablespoon olive oil in a skillet over medium heat. Add the finely chopped onion and cook for 3 to 4 minutes until softened and translucent. Stir in the minced garlic and cook another 30 seconds until fragrant.
  2. Transfer the sautéed onion and garlic to the crockpot. Add the shredded chicken breasts, drained white beans, corn kernels, and diced green chilies.
  3. Sprinkle in the ground cumin, chili powder, salt, and pepper. Pour in the chicken broth, making sure ingredients are mostly submerged but not swimming.
  4. Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until the chicken is tender enough to shred easily. Avoid lifting the lid too often.
  5. Remove the chicken breasts and shred them using two forks or a hand mixer on low speed. Return the shredded chicken to the crockpot and stir gently.
  6. Soften the cream cheese beforehand and stir it into the chili until fully melted and incorporated.
  7. Let the chili simmer on low for another 15 minutes to blend the cream cheese fully and thicken slightly. Taste and adjust salt and pepper as needed.
  8. Ladle into bowls and garnish with your favorite toppings like shredded cheddar, fresh cilantro, or a squeeze of lime.
