These crockpot mashed potatoes are incredibly creamy, buttery, and stress-free—perfect for feeding a crowd. No boiling, no draining, just dump everything in the slow cooker and let it work its magic.

Ingredients

Scale
  • 5 pounds russet potatoes, peeled and cut into 2-inch chunks
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup whole milk, warm
  • ½ cup sour cream, room temperature
  • 4 cloves garlic, minced
  • 1½ teaspoons fine sea salt
  • ½ teaspoon freshly ground black pepper
  • Optional: chopped fresh chives, parsley, or melted butter for garnish

Instructions

  1. Prep the Potatoes: Peel all 5 pounds of russet potatoes and cut them into roughly 2-inch chunks. Rinse in cold water to remove excess starch, then drain well.
  2. Layer in the Crockpot: Place the potato chunks in a 6-quart or larger slow cooker. Add minced garlic, 1½ teaspoons salt, and ½ teaspoon black pepper. Dot the top with 1 cup of softened butter, cut into pieces. Do not stir.
  3. Add the Liquid: Pour 1 cup of warm whole milk over the potatoes. The milk should come about halfway up the potatoes—add a splash more if needed.
  4. Cook: Cover and cook on low for 4 to 5 hours or on high for 2 to 3 hours, until the potatoes are fork-tender. Avoid lifting the lid too often.
  5. Mash the Potatoes: Carefully transfer the cooked potatoes to a large mixing bowl (or mash directly in the crockpot if sturdy). Add ½ cup sour cream. Use a hand mixer on low speed or a potato masher to mash until smooth and creamy. Do not overmix.
  6. Taste and Adjust: Taste and add more salt, pepper, or butter if desired.
  7. Keep Warm Until Serving: Return the mashed potatoes to the crockpot and set to ‘warm.’ They will stay creamy for up to 2 hours. If they dry out, stir in a splash of warm milk before serving.

Notes

For best results, rinse potatoes to remove excess starch, warm the milk before adding, and use room temperature dairy. Avoid overmixing to prevent gluey texture. The recipe is forgiving—if done early, switch to ‘warm’ setting. For a dairy-free version, use vegan butter, unsweetened oat milk, and dairy-free sour cream.
