A quick and easy 10-minute dip featuring sweet corn, creamy cheese, and a gentle kick from jalapeños. Perfect for game day, tailgates, or any gathering.

  • 8 oz cream cheese, softened
  • 15 oz can corn kernels, drained (or 2 cups frozen, thawed and patted dry)
  • 2 cups shredded sharp cheddar cheese
  • 23 medium jalapeños, seeded and diced
  • 34 green onions, sliced
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • Optional: 1/4 cup pickled jalapeños, diced

Instructions

  1. Prep your ingredients: dice jalapeños, slice green onions, drain corn (pat dry if using frozen).
  2. In a medium skillet over low heat, add softened cream cheese and stir constantly until smooth and melted, about 2 minutes.
  3. Stir in sour cream and mayonnaise until well combined and silky.
  4. Add drained corn, diced jalapeños, and half of the sliced green onions. Stir gently until mixture starts to bubble slightly.
  5. Gradually add shredded cheddar cheese, a handful at a time, stirring constantly until each addition melts completely.
  6. Sprinkle in garlic powder, chili powder, salt, and pepper. Stir well and adjust seasoning to taste.
  7. Cook on low heat for 1-2 minutes until hot and bubbly. Do not let it boil.
  8. Transfer to a serving bowl, garnish with remaining green onions and fresh jalapeño slices. Serve immediately with tortilla chips.

Notes

For best texture, use full-fat dairy and freshly shredded cheese. Pat corn dry to avoid watery dip. Soften cream cheese ahead of time for smooth melting. Reheat gently; add a splash of milk if needed. Not recommended for freezing.
