This isn’t just another dip—it’s a full-on edible bowl situation. The creamy, spicy buffalo chicken filling is scooped straight from a crusty, warm bread bowl that soaks up every last bit of goodness.

Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup buffalo hot sauce
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crumbled blue cheese (optional)
  • 1 round loaf sourdough or Italian bread (about 89 inches wide)
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional garnish: chopped green onions, extra hot sauce drizzle

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Prepare the bread bowl: Using a serrated knife, cut a circle about 2 inches from the edge of the top of the bread loaf. Carefully remove the top—this will be your ‘lid.’ Hollow out the inside of the loaf, leaving about a 1-inch thick wall on all sides. Tear the removed bread into bite-sized pieces and set aside for dipping.
  3. Make the butter wash: In a small bowl, combine the melted butter and garlic powder. Brush the inside and outside of the bread bowl and the lid with this mixture. Place the bread bowl and lid on the prepared baking sheet.
  4. Mix the dip filling: In a large mixing bowl, combine the softened cream cheese, ranch dressing, and buffalo hot sauce. Beat with a hand mixer on medium speed until smooth and creamy—about 1-2 minutes. If you’re using a spoon, mash the cream cheese into the liquids until no lumps remain.
  5. Fold in the chicken and cheese: Add the shredded chicken, 3/4 cup of the shredded cheddar cheese, and the crumbled blue cheese (if using). Stir until everything is evenly coated. Season with a pinch of salt and black pepper—remember, the hot sauce and ranch are already salty, so go easy.
  6. Fill the bread bowl: Spoon the buffalo chicken mixture into the hollowed bread bowl, pressing it gently into the corners. Top with the remaining 1/4 cup of shredded cheddar cheese.
  7. Bake the dip: Place the filled bread bowl (with the lid placed loosely on top) on the baking sheet. Bake for 20 minutes. Then, remove the lid and bake for another 10-15 minutes, until the dip is bubbly and the cheese on top is melted and golden. The bread should be crispy on the outside but still soft inside.
  8. Rest and serve: Let the dip cool on the baking sheet for 5 minutes—this allows the filling to set slightly and prevents burns. Garnish with chopped green onions and an extra drizzle of hot sauce if you like it fiery. Serve with the reserved bread pieces, tortilla chips, or celery sticks.

Notes

Use a dense, crusty sourdough or sturdy Italian round for the bread bowl. Don’t skip the butter wash—it adds a golden, crispy crust. If the dip looks loose before baking, don’t worry; the cream cheese and cheese will firm up as they bake. For a gluten-free version, skip the bread bowl and bake in a greased 9-inch baking dish.
