This creamy brown butter acorn squash soup is a revelation, with nutty brown butter and sweet roasted squash creating a velvety, unforgettable starter. It’s simple enough for a weeknight but impressive enough for holiday gatherings.

Ingredients

Scale
  • 2 medium acorn squash (about 2 ½ to 3 pounds total)
  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, chopped (about 1 ½ cups)
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • ½ cup heavy cream
  • 1 teaspoon fine sea salt
  • ½ teaspoon freshly ground black pepper
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons unsalted butter (for garnish)
  • 8–10 fresh sage leaves (optional)
  • ¼ cup roasted pepitas (pumpkin seeds)
  • Optional: maple syrup or balsamic glaze for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or foil.
  2. Cut the acorn squash in half. Scoop out the seeds and stringy pulp.
  3. Place the squash halves cut-side down on the prepared baking sheet. Roast for 30-35 minutes, until fork-tender. Let cool for about 10 minutes.
  4. While the squash roasts, melt 3 tablespoons of butter in a large soup pot over medium heat. Add the chopped onion and cook for 6-8 minutes until soft and translucent. Add the minced garlic and cook for another minute.
  5. Pour in the vegetable broth and bring to a gentle simmer.
  6. Scoop the roasted squash flesh from the skins and add it to the pot.
  7. Using an immersion blender, puree the soup until smooth. (Alternatively, use a countertop blender in batches.)
  8. Stir in the heavy cream, salt, pepper, cayenne, and nutmeg. Simmer on low for 5 minutes. Adjust seasoning to taste.
  9. For the garnish, melt the remaining 2 tablespoons of butter in a small skillet over medium heat. Swirl until it turns golden brown and smells nutty, about 3-4 minutes. If using sage leaves, add them to the hot butter until crisp, about 30 seconds.
  10. Ladle the soup into bowls. Drizzle with brown butter, top with crispy sage leaves and roasted pepitas. Optionally, add a swirl of maple syrup or balsamic glaze.

Notes

Don’t rush the brown butter; watch it closely to avoid burning. Roast squash cut-side down for moist flesh. Season in layers for depth. Soup tastes even better the next day. For a dairy-free version, use vegan butter and full-fat coconut milk.
