Ingredients

  • Whole milk, 4 cups (960 ml)
  • Heavy cream, 1/2 cup (120 ml)
  • Unsweetened cocoa powder, 1/3 cup (40 g)
  • Granulated sugar, 1/3 cup (65 g)
  • Dark chocolate, 2 ounces (55 g), finely chopped
  • Vanilla extract, 1 teaspoon
  • Sea salt, a pinch
  • Ground cinnamon, 1/4 teaspoon (optional)
  • Marshmallows, 1 cup
  • Whipped cream, 1 cup
  • Crushed candy canes, 1/2 cup
  • Chocolate shavings, 1/4 cup
  • Caramel sauce, 1/2 cup
  • Mini pretzel rods, 1 cup
  • Sprinkles, 1/4 cup
  • Toasted coconut flakes, 1/4 cup
  • Cinnamon sticks, 4-6
  • Chocolate chips, 1/4 cup

Instructions

  1. Make the cocoa base (10 minutes): In a medium saucepan, whisk together the cocoa powder, sugar, and a pinch of sea salt. Add about 1/2 cup of the milk and whisk into a smooth paste. Place the pan over medium heat and slowly pour in the remaining milk and the heavy cream, whisking constantly. Heat until steaming, about 4-5 minutes, but don’t let it boil.
  2. Add the chocolate and flavorings (3 minutes): Once the milk mixture is hot, remove the pan from the heat. Add the chopped dark chocolate and vanilla extract. Let it sit for 30 seconds, then whisk until the chocolate is completely melted and the cocoa is smooth. Stir in the cinnamon if using. Taste and adjust sweetness.
  3. Keep it warm (5 minutes): Pour the cocoa into a thermos or a slow cooker set to warm. If serving immediately, keep it on the stove over the lowest heat, stirring occasionally.
  4. Prepare the toppings board (10 minutes): While the cocoa is heating, line your board with parchment paper. Arrange small bowls and ramekins around the board, spacing them evenly. Fill each with a different topping.
  5. Add the larger items (5 minutes): Place the mini pretzel rods in a small jar or pile them directly on the board. Drizzle the caramel sauce into a small bowl. Arrange the cinnamon sticks in a small bundle.
  6. Finish with whipped cream (2 minutes): Transfer homemade whipped cream to a bowl and set it on the board. If using canned, set the can nearby.
  7. Serve and enjoy: Set out mugs next to the thermos of cocoa. Let everyone pour their own cup and browse the toppings board.

Notes

Don’t let the cocoa boil. Chop the chocolate finely for quick melting. Prep the toppings board first. Use a variety of textures. Keep extra cocoa warm in a slow cooker. The cocoa base can be made up to two days in advance.
