  • 12 tablespoons (170g) unsalted butter, melted and slightly cooled
  • 3 cups (450g) mixed berries (raspberries, blueberries, blackberries; fresh or frozen)
  • 1/2 cup (100g) granulated sugar
  • 2 tablespoons (16g) cornstarch
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, combine flour, rolled oats, brown sugar, cinnamon, and salt. Pour in melted butter and stir until mixture resembles coarse crumbs. Reserve about 1 1/2 cups for topping.
  3. Press remaining crumb mixture evenly into the bottom of the prepared pan. Bake for 10-12 minutes until lightly golden and fragrant.
  4. While crust bakes, whisk together granulated sugar, cornstarch, lemon juice, and vanilla extract in a medium bowl. Gently fold in mixed berries, ensuring even coating.
  5. Remove crust from oven and spread berry filling evenly over it.
  6. Sprinkle reserved oat topping evenly over the berries, leaving some gaps for juices to bubble through.
  7. Bake for 35-40 minutes until topping is golden brown and filling bubbles. Tent with foil if topping browns too quickly.
  8. Cool completely in the pan before cutting into bars to allow filling to thicken and ease slicing.

Use melted but cooled butter for best crumble texture. If topping feels too loose, add a tablespoon more flour or oats. Let bars cool completely before cutting to avoid crumbling.
