  • 4 cups beef broth (low-sodium preferred)
  • 1 large onion, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons Worcestershire sauce
  • Salt and black pepper to taste
  • 68 French rolls or hoagie buns
  • Butter (optional, for toasting buns)

Instructions

  1. Trim excess fat from the chuck roast but keep some marbling for flavor. Season generously with salt and black pepper on all sides.
  2. Place sliced onions and minced garlic at the bottom of the slow cooker.
  3. Set the beef on top of the onion and garlic. Pour in 4 cups of beef broth, then add Worcestershire sauce, dried thyme, and rosemary. The broth should cover about half the roast.
  4. Cover and cook on low for 8-10 hours or on high for 4-6 hours until beef shreds easily with a fork.
  5. Remove the roast and shred with two forks, discarding large fat pieces. Return shredded beef to the slow cooker to keep warm and soak up juices.
  6. Skim off excess fat from the liquid. For clearer au jus, strain broth through a fine-mesh sieve into a saucepan and warm gently on the stove. Adjust salt and pepper to taste.
  7. Optional: Spread butter on rolls and toast in a skillet over medium heat until golden and crispy.
  8. Assemble sandwiches by piling shredded beef on rolls. Serve with warm au jus for dipping.

Notes

Season beef generously before cooking for best flavor. Cooking on low yields more tender beef than high. Toasting rolls with butter is optional but recommended to prevent sogginess. Skim fat from au jus for a lighter sauce. Leftovers store well refrigerated for up to 3 days; freeze shredded beef only.
