A hearty, smoky beef chili with a soft, golden cornbread topping that soaks up the spicy juices. This one-pot wonder is perfect for busy days and delivers deep, layered flavor with minimal effort.

Ingredients

Scale
  • 2 lbs ground beef (80/20 works best)
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 4 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained (fire-roasted preferred)
  • 1 can (15 oz) tomato sauce
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1–2 chipotle peppers in adobo sauce, minced
  • 1 tablespoon adobo sauce
  • 1 cup beef broth (low-sodium preferred)
  • Salt and black pepper, to taste
  • 2 tablespoons tomato paste
  • 1 tablespoon brown sugar
  • 1 cup yellow cornmeal (medium-grind)
  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 cup buttermilk (or 1 cup milk + 1 tablespoon lemon juice, let sit 5 minutes)
  • 1 large egg
  • ¼ cup unsalted butter, melted
  • ½ cup shredded cheddar cheese (optional)

Instructions

  1. Brown the beef. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned all over—about 6-8 minutes. Don’t drain all the fat; leave about a tablespoon for flavor. Transfer the beef to your slow cooker.
  2. Sauté the aromatics. In the same skillet (don’t wipe it out!), add the diced onion. Cook for 3-4 minutes until softened, scraping up any browned bits from the bottom. Add the garlic and cook for 30 seconds until fragrant. Transfer to the slow cooker.
  3. Add the liquids and spices. To the slow cooker, add the diced tomatoes, tomato sauce, beef broth, tomato paste, chili powder, cumin, smoked paprika, oregano, minced chipotle peppers, adobo sauce, brown sugar, and a generous pinch of salt and pepper. Stir everything together until well combined.
  4. Add the beans. Gently fold in the drained kidney beans and black beans. Don’t overmix—you want some beans to stay whole.
  5. Slow cook. Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. The longer it cooks, the deeper the flavor. I usually go for 7 hours on LOW. The chili should be thick and fragrant.
  6. Prepare the cornbread topping (about 30 minutes before serving). In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt. In a separate small bowl, whisk the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry and stir until just combined—lumps are fine. Fold in the shredded cheddar if using.
  7. Add the topping. Uncover the slow cooker. Drop spoonfuls of the cornbread batter evenly over the surface of the chili. Don’t spread it—just let it sit in dollops. It will spread and puff as it cooks.
  8. Cook the topping. Cover the slow cooker again and cook on HIGH for 30-45 minutes. The cornbread should be golden on top and a toothpick inserted into the center should come out clean. If you want a browner top, you can pop the slow cooker insert under the broiler for 2-3 minutes—just make sure it’s oven-safe!
  9. Rest and serve. Let the chili sit, uncovered, for 5-10 minutes before serving. This helps the cornbread set and makes it easier to scoop. Serve hot with optional toppings like sour cream, sliced jalapeños, or fresh cilantro.

Notes

Don’t skip browning the beef for deep flavor. Taste and adjust chipotle heat. Let cornbread batter rest 5 minutes before adding. For a thinner chili, leave lid off last hour; for thicker, add broth. Use slow cooker liners for easy cleanup.
