  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 8 cups low-sodium chicken broth
  • 2 boneless, skinless chicken breasts (about 1 pound total)
  • 1 cup wild rice blend
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 2 bay leaves
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup heavy cream or half-and-half (optional)
  • 1 tablespoon lemon juice (optional)
  • 1 cup sliced mushrooms (optional)

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat. Add diced onion, carrots, and celery. Cook for 6-8 minutes, stirring occasionally, until onions are translucent and carrots begin to soften. Add minced garlic and cook for 1 more minute until fragrant.
  2. Pour in chicken broth, scraping the bottom of the pot to release browned bits. Add dried thyme, dried rosemary, bay leaves, salt, and black pepper. Stir and bring to a gentle boil.
  3. Place chicken breasts into the broth, ensuring they are mostly submerged. Stir in wild rice blend. Bring back to a boil, then reduce heat to low, cover, and simmer.
  4. Simmer covered for 35-40 minutes until rice is tender (grains should have a slight chew) and chicken is cooked through. If rice is not done, cook 5-10 minutes more.
  5. Remove chicken breasts with tongs and let cool slightly. Shred with two forks or a hand mixer on low speed.
  6. Return shredded chicken to the pot. Stir and taste broth; adjust seasoning as needed. Add lemon juice or heavy cream if desired.
  7. Remove bay leaves. Ladle soup into bowls, garnish with fresh parsley, and serve hot.

Notes

Wild rice blend is key for texture; do not substitute with white rice. For a vegetarian version, use vegetable broth and chickpeas or white beans. Soup thickens as it sits; add extra broth when reheating. Flavors improve after a day.
