A quick and easy 5-minute gingerbread whipped coffee recipe that combines instant coffee, warm spices, and a secret touch of molasses for a cozy holiday treat. Perfect for busy mornings or a festive afternoon pick-me-up.

Ingredients

Scale
  • 2 tablespoons instant coffee granules
  • 2 tablespoons granulated sugar
  • 2 tablespoons hot water
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cinnamon
  • ⅛ teaspoon ground cloves
  • ½ teaspoon molasses (optional but recommended)
  • 1 cup milk (240 ml)
  • ½ teaspoon vanilla extract
  • Whipped cream (optional, for garnish)
  • Cinnamon stick (optional, for garnish)
  • Crushed gingerbread cookies (optional, for garnish)
  • Star anise (optional, for garnish)

Instructions

  1. Heat your milk first. Pour 1 cup (240 ml) of milk into a small saucepan and warm it over medium heat until steaming but not boiling (about 3-4 minutes). If using the microwave, heat in 30-second bursts, stirring in between. Add ½ teaspoon vanilla extract to the milk and stir. Set aside.
  2. In a mixing bowl, combine 2 tablespoons instant coffee, 2 tablespoons granulated sugar, 2 tablespoons hot water, ½ teaspoon ground ginger, ¼ teaspoon ground cinnamon, ⅛ teaspoon ground cloves, and ½ teaspoon molasses (if using). Stir briefly to form a thick paste.
  3. Using an electric hand mixer on medium-high speed, beat the coffee mixture for 30-45 seconds until it becomes pale, fluffy, and holds stiff peaks. If whisking by hand, it will take 2-3 minutes of vigorous whisking.
  4. Check the texture: lift the beaters or whisk—the foam should hold its shape and not collapse. If still runny, whisk another 15-20 seconds.
  5. Pour the hot vanilla milk into a mug, filling it about three-quarters full.
  6. Spoon the whipped coffee foam on top of the hot milk. Do not stir yet.
  7. Garnish as desired with whipped cream, a sprinkle of cinnamon, crushed gingerbread cookies, or a cinnamon stick. Serve immediately. Stir before drinking or sip through the foam.

Notes

For best results, use water just off the boil (about 200°F) to help the coffee and sugar dissolve. The foam is best within the first 5-10 minutes; make it fresh just before serving. If the foam collapses, the water may have been too cool or the mixture under-whisked. For a dairy-free version, use oat milk or coconut milk. For an iced version, pour cold milk over ice and top with foam.
