Ingredients

Scale
  • 1 ½ cups (190g) all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • ½ cup (120ml) vegetable oil
  • ⅓ cup (80ml) fresh orange juice
  • 2 tablespoons orange zest
  • 1 teaspoon vanilla extract
  • 1 ½ cups (170g) fresh or frozen cranberries
  • 1 tablespoon all-purpose flour (for tossing cranberries)
  • 1 cup (120g) powdered sugar, sifted
  • 2 tablespoons milk or heavy cream
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving overhang on long sides.
  2. Zest and juice the orange. You need 2 tablespoons zest and ⅓ cup juice.
  3. In a medium bowl, whisk together 1 ½ cups flour, baking powder, baking soda, and salt.
  4. In a large bowl, rub sugar and orange zest together with fingers for 30 seconds. Whisk in eggs one at a time, then add oil, orange juice, and vanilla. Whisk until combined.
  5. Pour dry ingredients into wet mixture. Stir with a rubber spatula until just combined (about 15 strokes). Do not overmix.
  6. In a small bowl, toss cranberries with 1 tablespoon flour. Gently fold into batter.
  7. Pour batter into prepared pan and spread evenly. Bake for 50-60 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. If browning too quickly, tent with foil at 40 minutes.
  8. Cool in pan for 15 minutes, then lift out using parchment handles and transfer to a cooling rack. Cool completely before glazing (about 1 hour).
  9. For the glaze: In a small bowl, whisk together powdered sugar, milk or cream, vanilla, and salt until smooth. Adjust consistency as needed.
  10. Drizzle glaze over cooled bread. Let set for 10 minutes before slicing with a serrated knife.

Notes

Toss cranberries in flour to prevent sinking. Use room temperature eggs for best texture. Cool completely before glazing. Bread tastes even better the next day. Store at room temperature for up to 3 days; freeze unglazed for up to 3 months.
