  • 1/4 cup brown sugar (50g)
  • For the Vanilla Bean Glaze:
  • 1 cup powdered sugar (120g)
  • 23 tbsp milk (30-45ml) or cream
  • Seeds from 1 vanilla bean
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line with parchment paper.
  2. Brown the butter in a small saucepan over medium heat, stirring constantly until golden brown and nutty smelling. Remove from heat and cool about 5 minutes.
  3. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, and salt.
  4. In the bowl with browned butter, whisk in granulated sugar. Add eggs one at a time, mixing well after each. Stir in vanilla extract and buttermilk.
  5. Pour wet ingredients into dry ingredients and gently fold until just combined; batter should be slightly lumpy.
  6. Toss diced apples with brown sugar, then fold into the batter gently.
  7. Pour batter into prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, checking at 50 minutes with a toothpick; it should come out with a few moist crumbs but no raw batter. Tent with foil if browning too fast.
  9. Cool bread in pan for 15 minutes, then transfer to a cooling rack to cool completely.
  10. Make glaze by whisking powdered sugar, milk, vanilla bean seeds, and salt until smooth and pourable. Adjust consistency as needed.
  11. Drizzle glaze over cooled bread and let set for 10-15 minutes before slicing.

Notes

Brown butter carefully to avoid burning; remove from heat as soon as golden and nutty. Do not overmix batter to keep bread tender. Dice apples about 1/2 inch for even baking. Cool bread completely before glazing to prevent glaze from melting. For gluten-free option, substitute flour with 1:1 gluten-free baking blend. Vegan adaptations include flax eggs and dairy-free butter and milk alternatives.
