  • 1/4 cup granulated sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons bourbon
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon freshly grated nutmeg (optional)
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/3 cup light brown sugar, packed
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 6 tablespoons unsalted butter, cold and cubed
  • 1/4 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, toss the sliced peaches with granulated sugar, brown sugar, flour, lemon juice, bourbon, cinnamon, and nutmeg. Mix gently but thoroughly.
  3. Transfer the peach mixture to your baking dish and spread evenly.
  4. In a separate bowl, combine rolled oats, flour, brown sugar, salt, and cinnamon.
  5. Add the cold cubed butter and cut it into the dry ingredients using a pastry cutter or forks until pea-sized crumbs form.
  6. Stir in chopped nuts if using.
  7. Sprinkle the oat topping evenly over the peach filling without pressing down.
  8. Bake uncovered for 35-40 minutes until the topping is golden brown and the filling is bubbly. Tent with foil if topping browns too fast.
  9. Let the crisp cool for at least 10 minutes before serving.

Notes

Use cold butter for a crunchy topping and avoid overmixing the topping to keep pea-sized crumbs. If peaches are very juicy, add an extra tablespoon of flour to the filling. For gluten-free, substitute almond flour and gluten-free oats. Bourbon can be replaced with vanilla extract for a booze-free version.
