  • 1¼ cups (300ml) warm water (about 110°F)
  • 2¼ teaspoons active dry yeast (one packet)
  • 1 tablespoon granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1½ teaspoons fine sea salt
  • ½ cup baking soda (for the bath)
  • 10 cups water (for the bath)
  • Coarse sea salt or pretzel salt, for topping
  • 8 ounces sharp cheddar cheese, freshly grated
  • 4 ounces cream cheese, softened
  • ½ cup (120ml) beer (lager or pale ale)
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Activate the yeast: In a large mixing bowl, combine warm water and sugar. Sprinkle yeast on top and let sit for about 5 minutes until foamy.
  2. Make the dough: Add melted butter, salt, and 2 cups of flour to the yeast mixture. Stir until combined. Gradually add remaining flour, ½ cup at a time, until a shaggy dough forms. Turn onto a lightly floured surface and knead for 6-8 minutes until smooth and elastic.
  3. Let it rise: Place dough in a lightly oiled bowl, cover with a clean kitchen towel, and let rise in a warm spot for 45-60 minutes until doubled in size.
  4. Preheat and prepare: About 15 minutes before dough is done rising, preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  5. Make the baking soda bath: In a large pot, bring 10 cups of water to a boil. Carefully add baking soda (it will foam). Reduce heat to a gentle simmer.
  6. Shape the pretzel bites: Punch down risen dough and turn onto a lightly floured surface. Divide into 4 equal pieces. Roll each into a 1-inch thick rope, then cut into 1-inch pieces.
  7. Boil the pretzel bites: Working in batches of 6-8, drop pieces into simmering baking soda water. Boil for about 30 seconds until they float. Remove with a slotted spoon and place on prepared baking sheet, spacing 1 inch apart.
  8. Add the salt: While still wet, sprinkle generously with coarse sea salt or pretzel salt.
  9. Bake: Bake for 12-15 minutes until deep golden brown. Let cool on baking sheet for 5 minutes.
  10. Make the beer cheese dip: While pretzel bites bake, combine cream cheese and beer in a small saucepan over medium-low heat. Whisk until melted and smooth. Gradually add shredded cheddar, whisking constantly until melted. Stir in Dijon mustard, garlic powder, Worcestershire sauce, salt, and pepper. Keep warm over very low heat.
  11. Serve: Brush warm pretzel bites with melted butter (optional). Serve immediately with warm beer cheese dip.

Don’t skip the baking soda bath—it gives pretzels their distinctive flavor and color. Keep the water at a gentle simmer, not a rolling boil. Grate your own cheese for a smooth dip. Watch the heat on the cheese dip to prevent separation. You can shape, boil, and refrigerate the bites for up to 4 hours before baking.
