These air fryer cinnamon sugar pumpkin seeds are a quick, easy, and addictive snack. They’re perfectly crispy, sweet, and spiced, making them ideal for cozy evenings, movie nights, or holiday gatherings.

Ingredients

Scale
  • 1 cup (120g) raw, shell-on pumpkin seeds
  • 2 tablespoons (28g) unsalted butter, melted
  • 2 tablespoons (25g) granulated sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Preheat your air fryer to 320°F (160°C). Line a plate or small baking sheet with parchment paper for later.
  2. If using fresh pumpkin seeds, rinse them in a colander to remove pulp, then pat completely dry with paper towels. If using store-bought raw seeds, skip this step.
  3. In a medium mixing bowl, combine pumpkin seeds, melted butter, sugar, cinnamon, salt, and vanilla extract (if using). Stir until every seed is evenly coated.
  4. Spread the coated seeds in the air fryer basket in a single layer. Do not overcrowd; cook in batches if doubling the recipe.
  5. Cook for 8-10 minutes, shaking the basket or stirring halfway through at the 4-minute mark. Check at 8 minutes; seeds should be golden brown and fragrant. Add 1-2 minutes if needed.
  6. Transfer the cooked seeds to the parchment-lined plate or baking sheet, spreading them out to cool. Let cool completely for at least 10 minutes before serving. They will crisp up as they cool.

Notes

For extra crunch, soak seeds in salted water for 2 hours before drying and cooking. Store in an airtight container at room temperature for up to 5 days. To revive crunch, reheat in air fryer at 300°F for 2-3 minutes. For a vegan version, substitute butter with coconut oil or plant-based butter.
