A nostalgic and comforting jello salad featuring a fruity gelatin base topped with a rich, homemade whipped cream and cream cheese topping. Perfect for potlucks and family gatherings.

  • 1 box (3 oz) flavored gelatin (strawberry or raspberry recommended)
  • 1 cup boiling water
  • 1 cup cold water
  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup miniature marshmallows
  • Optional: 1 cup chopped maraschino cherries or mixed fruit cocktail
  • 8 oz cream cheese, softened (full-fat recommended)
  • 1 cup heavy whipping cream, cold
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Dissolve the flavored gelatin powder in 1 cup boiling water, stirring until completely dissolved (about 2 minutes).
  2. Add 1 cup cold water to the gelatin mixture, stir gently, and let cool until lukewarm but not set (about 20-25 minutes).
  3. Drain pineapple well and fold pineapple, marshmallows, and optional cherries gently into the gelatin mixture.
  4. Pour the mixture into a 9×9 inch dish and refrigerate for about 1 hour until slightly thickened but not fully firm.
  5. Beat softened cream cheese until smooth using an electric mixer.
  6. In a separate chilled bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  7. Fold whipped cream gently into the cream cheese until just blended.
  8. Spread the whipped topping evenly over the slightly set gelatin mixture and smooth the surface.
  9. Refrigerate for at least 2 hours until fully set and firm.
  10. Cut into squares or scoop with a spoon and serve chilled.

Notes

Ensure gelatin is fully dissolved to avoid clumps. Cool gelatin to lukewarm before adding fruit and topping to prevent curdling. Drain fruit well to avoid watery salad. Fold whipped cream gently to keep topping light and airy. Refrigerate adequately for proper setting.
