These spooky Frankenstein guacamole deviled eggs are a fun and delicious Halloween appetizer. Creamy deviled eggs are topped with a zesty guacamole and decorated to look like Frankenstein’s monster.

  • 6 large eggs
  • 3 tablespoons mayonnaise (Hellmann’s or Duke’s recommended)
  • 1 teaspoon yellow mustard
  • 1 teaspoon white vinegar
  • Salt and black pepper to taste
  • Fresh chives, finely chopped (for garnish)
  • 2 ripe avocados
  • 1 tablespoon fresh lime juice
  • 1/4 cup finely diced red onion
  • 1 small jalapeño, seeded and finely minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon ground cumin
  • Salt to taste
  • 12 pitted black olives (for bolts)
  • 1 slice red bell pepper (for mouth)

Instructions

  1. Place the 6 large eggs in a single layer in a medium saucepan. Cover with cold water by about an inch. Bring to a full, rolling boil over high heat. Once boiling, immediately cover the pot with a lid and remove from heat. Let sit for exactly 10 minutes.
  2. While eggs cook, prepare a large bowl of ice water. After 10 minutes, transfer eggs to the ice bath using a slotted spoon. Let chill for at least 10 minutes.
  3. Gently tap eggs on the counter to crack the shell all over. Peel starting from the wider end. Rinse under cold water and pat dry. Slice each egg in half lengthwise. Pop out yolks into a small mixing bowl. Arrange 12 white halves on a serving platter.
  4. To the bowl with yolks, add mayonnaise, yellow mustard, white vinegar, and a pinch of salt and pepper. Mash together with a fork until smooth and creamy. Adjust seasoning to taste.
  5. Spoon the yolk mixture into the hollow of each egg white. Fill generously. Set aside.
  6. In a medium mixing bowl, scoop out flesh from the avocados. Add lime juice immediately and mash to desired consistency (slightly chunky recommended). Stir in red onion, jalapeño (if using), cilantro, cumin, and a generous pinch of salt. Mix until combined. Adjust salt or lime juice to taste.
  7. Take a heaping teaspoon of guacamole and place on top of a filled deviled egg. Using a small offset spatula or butter knife, spread guacamole into a rough square or rectangle shape, covering the yolk filling completely.
  8. Press two black olive slices into the top of the guacamole square for the ‘bolts’ near the bottom edge on either side. Cut a small zig-zag slit into the guacamole for the mouth and insert a tiny sliver of red bell pepper. Sprinkle chopped chives on top for ‘hair’ or ‘stitches’.
  9. Repeat with remaining eggs and guacamole. Serve immediately or refrigerate until serving.

Notes

For best results, use eggs that are a week old for easier peeling. The guacamole should be made fresh on the day of serving to prevent browning. If making ahead, prep the deviled eggs and guacamole separately and assemble just before serving.
