  • 4 cloves garlic, minced
  • 3 cans (15 oz each) pork and beans, undrained
  • 1 cup dark brown sugar, packed
  • 1/2 cup ketchup
  • 2 tablespoons yellow mustard
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons smoked paprika
  • 1/4 cup bourbon
  • Salt and black pepper to taste

Instructions

  1. Preheat oven to 325°F (160°C). Chop bacon into 1-inch pieces and dice onion.
  2. In a large Dutch oven or oven-safe pot over medium heat, cook bacon until crispy, about 8-10 minutes. Transfer bacon to a paper towel-lined plate, leaving fat in pot.
  3. Add diced onion to pot and sauté until soft and translucent, about 5-7 minutes. Add minced garlic and cook 1 minute until fragrant.
  4. Add undrained pork and beans, brown sugar, ketchup, mustard, Worcestershire sauce, and smoked paprika. Stir to combine.
  5. Stir in bourbon and half the crispy bacon. Season with salt and pepper to taste.
  6. Bring to a gentle simmer on stovetop. Cover and transfer to oven. Bake for 2 hours.
  7. Remove lid and bake another 30-45 minutes until sauce is thick and syrupy.
  8. Let rest 10 minutes. Stir in remaining crispy bacon just before serving.

Notes

For a vegetarian version, omit bacon and sauté onions in 2 tablespoons olive oil or butter, adding 1/2 teaspoon liquid smoke. For a spicy kick, add 1-2 minced chipotle peppers in adobo sauce. Leftovers keep in the refrigerator for up to 5 days and freeze well for up to 3 months.
