Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1 cup heavy cream
  • 1 ½ cups pecan halves
  • 1 teaspoon vanilla extract
  • ½ teaspoon sea salt (plus more for sprinkling)
  • 1 box (15.25 oz) yellow cake mix
  • ½ cup unsalted butter, melted
  • ½ cup milk
  • 1 teaspoon ground cinnamon (optional)
  • ½ cup granulated sugar (for caramel sauce)
  • 2 tablespoons unsalted butter, cut into pieces (for caramel sauce)
  • ¼ cup heavy cream (for caramel sauce)
  • ½ teaspoon flaky sea salt (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Make the caramel pecan base: In the baking dish, pour the melted butter (1 cup) and sprinkle the brown sugar evenly over it. Do not stir. Sprinkle the pecan halves over the sugar mixture in an even layer. Drizzle the heavy cream (1 cup) over the top, then add the vanilla extract. Give the dish a gentle shake to help everything settle, but do not stir. Set aside.
  3. Prepare the cobbler topping: In a large mixing bowl, combine the yellow cake mix, melted butter (½ cup), milk, and cinnamon (if using). Stir until just combined—a few lumps are fine. The batter should be thick but pourable.
  4. Layer the batter: Drop spoonfuls of the batter over the pecan mixture in the baking dish. Do not try to spread it evenly—just dollop it around. Sprinkle the ½ teaspoon of sea salt over the top.
  5. Bake: Place the dish on the middle rack of your oven and bake for 30-35 minutes. The top should be golden brown and the edges should be bubbly. The center might still look a little jiggly—that’s okay.
  6. Make the salted caramel sauce (optional): While the cobbler bakes, combine the granulated sugar and 2 tablespoons of water in a medium saucepan over medium heat. Swirl the pan gently—do not stir—until the sugar dissolves and turns a deep amber color, about 5-7 minutes. Remove from heat and carefully whisk in the butter pieces. Slowly pour in the heavy cream while whisking constantly. Stir in the flaky sea salt. Let it cool slightly.
  7. Cool and serve: Let the cobbler cool on a wire rack for at least 15 minutes. Drizzle the homemade caramel sauce over the top (or just sprinkle with extra sea salt if you skipped the sauce). Serve warm, preferably with a scoop of vanilla ice cream.

Notes

Let the cobbler cool for at least 15 minutes before serving to allow the caramel to set. For best results, use a glass or ceramic baking dish. If using a metal pan, reduce oven temperature to 325°F and check at 25 minutes. The cobbler tastes even better the next day as the flavors meld. To reheat, microwave individual portions for 20-30 seconds or reheat the whole dish in a 300°F oven for 10 minutes.
